Plant-based Sausage Rolls

Plant-based Sausage Rolls 

(Vegan)

Even those who are not plant based will love these bad boys!

This is our favourite go to party food when your invited to attend a party and need to bring a plate, or if your having guests over at your place.

The leftovers can also be eaten cold the next day, and make a great lunchbox snack!

 

Ingredients:

1 brown onion

1 garlic clove

1/2 cup cashews

300g firm tofu

100g panko breadcrumbs

4 tbsp soy sauce

4 tbsp gravox mix

salt and black pepper

Extra:

pampas puff pastry sheets (2-3)

plant milk

sesame seeds

 

Method:

Option 1 - if you do not have a food processor you can make these sausage rolls by hand.

  1. Pre-heat oven to 180 degrees fan-forced
  2. Mince the onion and garlic
  3. Finely chop the cashew nuts
  4. drain and crumb the tofu
  5. add all ingredients (excluding the extras ) into a large bowl and mix until combined
  6. Cut the puff pastry sheets in half and place the mixture onto the center of the rectangles, making a sausage length-ways
  7. Fold the edges of the pastry over and close with a fork
  8. Cut the sausage rolls into smaller lengths (about 5cm)
  9. Use a pastry brush to lightly coat the rolls with plant milk and top with sesame seeds
  10. Place the rolls onto a baking tray and bake for 30-40 minutes until light golden brown

Option 2 - if your lucky enough to own a food processor, this option is for you.

  1. Pre-heat oven to 180 degrees fan-forced
  2. Blitz the onion and garlic on high speed for a few seconds until minced
  3. Add the cashew nuts and blitz on high speed until a crumb forms
  4. Add in the rest of the ingredients (excluding the extras ) and mix at low speed until just combined
  5. Cut the puff pastry sheets in half and place the mixture onto the center of the rectangles, making a sausage length-ways
  6. Fold the edges of the pastry over and close with a fork
  7. Cut the sausage rolls into smaller lengths (about 5cm)
  8. Use a pastry brush to lightly coat the rolls with plant milk and top with sesame seeds
  9. Place the rolls onto a baking tray and bake for 30-40 minutes until light golden brown
